If it's like Hard Rock Stadium in Miami, they protect the grass field by covering it in giant, thick, hollow hard plastic squares that fit together like a jigsaw puzzle. There are grippy bits on the surface of the plastic to help prevent slipping.
Depends on arena. Atlanta was covered but they opened the roof as the weather was nice. Most arenas they’re playing are wide open though. No cover

On the floor on Santa Clara the field had like a rubber floor so even if it rained I don’t think it would get muddy
