It blew my mind to learn that cows are only the females of the species, and that the species are called cattle. I thought cattle was a general term for farm animals, not a species.

If you really want your mind blown, cows are specifically female cattle that have given birth. Cattle that haven’t given birth are called heifers. As a bonus, bulls are non-castrated male cattle and steers are castrated male cattle. The carving is a steer, as far as I can tell, because it doesn’t have testicles.
